Avocado on Toast

This delicious yet simple @fitfifa approved dish for vegetarians can do for a great breakfast meal or snack!
Here is how to make it:
Ingredients:
- 1/4 avocado, sliced.
- 1 slice of wholemeal bread.
- A handful of arugula.
- 1 tomato, cubed.
- 1/2 onion, finely chopped.
- Juice of one lemon.
- 1 tsp black pepper.
- 1/2 tsp salt.
- 1 tsp mixed herbs.
- Few Micro greens (I used fenugreek) to garnish.
- A drizzle of balsamic vinegar.
Method:
- Toast the wholemeal bread in a toaster.
- While the bread roasts, Make tomato salsa by mixing together tomato, onion, salt, pepper, lemon juice, mixed herbs and set aside.
- Layer the bread with sliced avocado, rocket leaves, tomato salsa and top it up with micro greens.
- Serve with a drizzle of balsamic Vinegar on top.
