Grilled Cauliflower steak with chimichurri sauce

I made this low-carb meal last night, it was very light on the stomach and it’s diverse flavors complemented each other and satisfied our taste buds fully. My kids loved it too and couldn’t wait to start munching, luckily I managed to get a decent picture before it was cleaned up. 😋
Original recipe for cauliflower and chimichurri from @everylastbite_
Ingredients
- 1 big head caulfilower
- Olive oil
Instructions
- Cut the cauliflower head into 1/2 inch steak slices from the middle and coat with oil. Put it on the grill tray and allow to grill on high for 15-20 minutes, turning halfway and coating with some chimichurri sauce. Leave it in until slightly charred.
Chimichurri Sauce:
Ingredients
- 2 cups finely chopped parsley
- 4 cloves garlic crushed
- 1/4 cup Brown vinegar
- Juice of 1 lemon
- Salt
- Red pepper flakes @flavorgod
- Himalayan salt with pink peppercorns @flavorgod
- Everything seasoning
- Olive oil
- Oregano
Instructions
- Mix all ingredients in and blitz half the sauce untill smooth and mix it with the rest of the chunky mix.
- You can choose to leave it all chunky or blitz it all.
- Coat the cauliflower with this sauce while it is cooking and whatever remains can be cooked slightly and served on the side.
Grilled Aubergine:
Ingredients
- 5 small Aubergine, olive oil, @flavorgod
- garlic and herb salt, mixed herbs
Instructions
- Cut the aubergine into quarter-inch round slices and season with olive oil, salt, and herbs. Bake in the oven for 15 minutes or until tender. Garnish with a lime.
Tunisian Salad:
Ingredients
- Onion, tomato, green pepper, cucumber and parsley.
- Dressing- olive oil, salt, pepper, lemon juice.
Instructions
- Chop all veggies and mix them. Top it up with the dressing.
- I highly recommend this dish, it can be made as a meal on its own or you can use one of them as a side for a meat dish too.
