Mediterranean Quinoa Salad

Enjoy this lovely nutritious salad this week! This makes it to my lunch every week as it is so light on the tummy and so filling at the same time. I use quinoa or couscous depending on what is available in my pantry. Also, vegan cheese from @heyvegan_Itd

Ingredients

Quinoa

  • 2 cup water
  • 1 cup quinoa
  • 1/2 tsp salt
  • 2 tbsp olive oil

Salad

  • 1/2 cup tomato, diced
  • 1/2 cup cucumber, deseeded and diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup chickpeas, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/2 cup olives, pitted and sliced
  • 2 tbsp vegan cheese
  • 1 tsp chopped parsley
  • 1 tsp chopped mint
  • 1 tsp basil
  • 1/4 tsp dried oregano
  • 1 tbsp green chillies, chopped
  • 1 tbsp green pepper
  • 2 tbsp capers

Lemon Dressing

  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp olive oil

Method

Quinoa

  • Bring water to boil and add salt, olive oil, and quinoa.
  • Cover with lid and let it cook until all water absorbs.
  • When ready, fluff with fork. Let it cool.

Salad

  • Combine all salad ingredients in a bowl with quinoa.

Lemon Dressing

  • Whisk together lemon zest, lemon juice, vinegar, salt, and pepper.
  • Add olive oil slowly and whisk until it forms a thick dressing.
  • Pour over the salad before serving.
