Simple Greek Salad

I have been struggling with cooking lately which has led me to find quick and easy recipes, this made a great lunch!
INGREDIENTS
Salad
- 250 gms pasta
- 2 cups cherry tomatoes, halved
- 3/4 English cucumber, cut into cubes
- 1/2 red onion, chopped
- 20 pickled green or black olives
- 20 pickled capers
- 1/4 cup fresh parsley
- 1/4 cup red peppers, cubed
- 1/4 cup yellow peppers, cubed
Dressing
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves of garlic, mashed
- 1 tsp Dijon mustard
- 3 tbsp balsamic vinegar
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt & pepper, to taste
Method
- Cook the pasta according to instructions and allow to cool.
- Prepare the veggies and the dressing.
- In a large bowl, combine all ingredients, add the dressing and toss.
- Chill for at least 2–3 hours before serving.
