Tomato Pasta with Spinach and Chickpeas

Pasta lovisstaaa! A Quick and Easy Dinner Meal I made yesterday which was devoured by family! I hope you enjoy it too! I got the Apple cider vinegar and tamari soy sauce from @healthyuke and the salts from @flavorgod @flavorgodseasoning
Ingredients
Pasta
- 200 grams pasta (penne or farfalle)
- 2 tbsp olive oil
- 2 tsp salt
- Water to boil
Sauce
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 4 tomatoes, finely chopped
- 200 grams mushrooms, sliced
- 2 tbsp apple cider vinegar
- 2 tbsp tamari soy sauce
- 2 tsp smoked paprika
- 2 tsp cumin
- Fresh green chilly paste, to taste
- Garlic and herb salt, to taste
- Himalayan pink salt & pink peppercorn, to taste
- 1 cup chickpeas, rinsed and drained
- 2 cups spinach, chopped
- A handful of chopped almonds
Method
- Boil the pasta in water with oil and salt.
- For the sauce, fry the onions and mushrooms in olive oil for 3–5 minutes or until they soften.
- Then add tomatoes, cumin, paprika, vinegar, tamari, salts and cook for 5–10 minutes.
- Stir in chickpeas and spinach at the end.
- Serve with chopped almonds on top.
