Enjoy this Mumbai Roadside Style VEGGIE FRANKIE this week!
Ingredients
- 2 cups flour
- 1 tbsp vegetable oil
- 1 tsp salt
- 1/2 cup water
- 1/2 cup French beans, halved
- 1 cup carrots, Julienned
- 1 cup capsicum, Julienned
- 1 big onion, sliced
- 3 cups cabbage, shredded
- 1/2 cup spring onion
- 1/2 cup moong, boiled
- 1 1/2 cup noodles, boiled
- 2 tbsp sesame oil
- 1 tsp chilli sauce
- 2 tbsp soya sauce
- 2 tsp vinegar
- 1 tsp sugar
- Salt & pepper to taste
Method
- Make the dough with flour, vegetable oil, salt & water and set aside.
- Stir fry all veggies in sesame oil.
- Then add soya sauce, chilli sauce, vinegar and sugar.
- Stir in noodles and moong.
- Season with salt & pepper and leave aside to cool.
- Roll thin round chapati for wrapping the veggies.
- In a bowl, make a thick paste of flour and water (approx. 2 tbsp flour with 1 tbsp water) to act as glue to stick the wrap ends together.
- Add a handful of the veggie-noodle mix on the chapati and roll into a wrap lightly.
- Stick the sides and the ends together with flour glue.
- Shallow fry the wraps and cut them into halves.
- Serve with ketchup and chilli sauce.
